Instructions

Cook the Aromatics

In a medium saucepan over medium heat, melt the butter together with the olive oil.

Add the chopped onion and cook for 4–5 minutes until softened and translucent.

Stir in the minced garlic and cook for about 30 seconds until fragrant.

Build the Soup Base

Sprinkle the flour over the vegetables and whisk continuously for 1 minute.

Gradually add the broth while whisking to create a smooth mixture without lumps.

Allow the soup to simmer for 5–7 minutes, or until slightly thickened.

Add the Dairy

Stir in the heavy cream and milk.

Reduce the heat to low and let the mixture gently simmer for about 5 minutes.

Finish with Lemon

Remove the pot from direct heat.

Slowly stir in the lemon juice and lemon zest.

Season with salt, black pepper, and white pepper if using. Taste and adjust as needed.

Helpful Tip: Adding the lemon after cooking preserves its fresh flavor and helps prevent the dairy from separating.

Blend for a Smooth Texture

For an ultra-creamy consistency, use an immersion blender directly in the pot.
