Mother’s Day treat with just 5 ingredients. Perfect for when you want something impressive without a lot of effort.

This 5-Ingredient Slow Cooker Lemon Sponge Pudding is a simple dessert that feels wonderfully indulgent. As it cooks, the mixture separates into two layers—a soft, airy sponge on top and a silky lemon pudding underneath. The gentle heat of the slow cooker helps create that delicate texture with very little effort.
5-Ingredient Slow Cooker Lemon Sponge Pudding
Ingredients:
- 1 cup granulated sugar
- 1/2 cup all-purpose flour
- 3 large eggs, separated
- 1 cup whole milk
- 1/3 cup fresh lemon juice (plus 1 teaspoon lemon zest)
Instructions:
Step 1: Combine Dry Ingredients
In a medium bowl, whisk the sugar and flour together until evenly blended and smooth.
Step 2: Prepare the Batter
In a large bowl, whisk the egg yolks with the milk, lemon juice, and lemon zest until well combined. Slowly add the dry mixture, whisking until a smooth, thin batter forms.
Step 3: Incorporate Egg Whites
In a separate bowl, beat the egg whites until soft peaks form. Gently fold them into the batter in batches, taking care not to deflate the mixture.
Step 4: Cook in Slow Cooker
Lightly grease a 4–6 quart slow cooker and pour in the batter. Cover and cook on LOW for 2½ to 3 hours, until the top is set and slightly puffed.
Step 5: Rest Before Serving
Turn off the heat and let the pudding sit, covered, for about 15 minutes.
Serve
Spoon into bowls and serve warm. Each serving features a light sponge layer on top with a creamy lemon pudding beneath.
