This Oven-Baked Cheesy Broccoli and Rice Casserole is a cozy, family-friendly side dish made with tender broccoli, fluffy rice, creamy sour cream, and plenty of melted cheese.

Oven-Baked Cheesy Broccoli and Rice Casserole

Ingredients

  • 2 cups broccoli florets
  • 2 cups cooked white rice
  • 1 1/2 cups shredded cheddar cheese, divided
  • 1 cup milk
  • 1/2 cup sour cream
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped

Directions

1. Preheat the oven

Preheat your oven to 350°F (175°C).

Lightly grease a 9-by-13-inch casserole dish.

2. Cook the onion, garlic, and broccoli

Heat the butter and olive oil in a large skillet over medium heat.

Add the chopped onion and garlic and cook for about 3 to 4 minutes, or until the onion becomes soft and translucent.

Add the broccoli florets and continue cooking for about 5 minutes, until they are bright green and tender-crisp.

3. Combine the casserole mixture

In a large mixing bowl, combine:

  • Cooked white rice
  • Sautéed broccoli, onion, and garlic
  • 1 cup shredded cheddar cheese
  • Milk
  • Sour cream
  • Salt
  • Black pepper
  • Paprika

Stir until everything is evenly combined and coated in the creamy mixture.

4. Assemble the casserole

Transfer the mixture to the prepared baking dish.

Spread it evenly across the dish.

Sprinkle the remaining 1/2 cup cheddar cheese over the top, followed by the grated Parmesan.

5. Bake

Bake uncovered for 25 to 30 minutes, or until the casserole is hot and bubbling and the cheese on top is melted and lightly golden.

6. Rest and serve

Remove the casserole from the oven and let it rest for a few minutes.

Sprinkle with fresh chopped parsley before serving.
