My uncle always made these on cool weekend afternoons, and the aroma would fill the whole house. I still can’t believe something with only 4 ingredients could turn out so comforting and delicious.

Sausage and Potato Foil Packets
These simple 4-ingredient sausage and potato foil packets are loaded with smoky, comforting flavor and make an easy all-in-one meal. As everything cooks together inside the foil, the butter blends with the sausage and onions to create a rich savory coating while the potatoes turn soft and tender. Perfect for an easy dinner with cozy campfire-style flavor.
Ingredients
- 1½ lbs smoked sausage or kielbasa, sliced into ½-inch pieces
- 2 lbs russet or Yukon gold potatoes, diced into ½-inch chunks
- 2 medium yellow onions, thinly sliced
- 6 tbsp salted butter, cut into small cubes
Instructions
Step 1: Prepare the Foil Packets
Preheat your oven to 400°F. Evenly divide the potatoes, onions, and sausage among 4 large sheets of heavy-duty foil.
Tip: Heavy-duty foil helps lock in steam so the potatoes cook through evenly and stay tender.
Step 2: Add Butter
Scatter the butter pieces evenly over the ingredients in each packet.
Tip: As it melts, the butter combines with the sausage juices to create extra flavor throughout the packets.
Step 3: Seal the Packets
Fold the foil over the ingredients and tightly crimp the edges closed, leaving a little room inside for steam circulation.
Visual Cue: The packets should be fully sealed but slightly roomy inside to allow proper steaming.
Step 4: Bake
Arrange the packets on a baking sheet and bake for 35–45 minutes.
Visual Cue: The potatoes should be soft enough to pierce with a fork, and the packets will appear slightly puffed from trapped steam.
Step 5: Crisp the Top (Optional)
For more roasted flavor, carefully open the foil packets and return them to the oven for an additional 5–10 minutes.
Tip: Letting some steam escape at the end helps the sausage and onions caramelize slightly for deeper flavor.
