Ingredients

  • 1 pound ground beef
  • 1 pound ground Italian sausage
  • 10 lasagna noodles
  • 1 yellow onion, chopped
  • 1 jar (24 ounces) pasta sauce
  • 4 teaspoons minced garlic
  • 8 cups chicken broth
  • 2 tablespoons tomato paste
  • 1 can (14 ounces) diced tomatoes
  • 1 teaspoon sugar
  • 2 teaspoons balsamic vinegar
  • 2 teaspoons dried basil
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • Salt and black pepper, to taste

Optional toppings: Grated Parmesan, shredded mozzarella, or a spoonful of ricotta cheese.

Instructions

1. Brown the meat and onion.

Heat a large pot or Dutch oven over medium-high heat. Add the ground beef, Italian sausage, and chopped onion. Cook, breaking the meat into small pieces, until the meat is thoroughly browned and the onion has softened. Drain off any excess grease.

2. Add the garlic.

Stir in the minced garlic and cook for about 30 seconds, just until fragrant. Stir frequently to prevent the garlic from burning.

3. Prepare the tomato broth.

Add the pasta sauce, diced tomatoes, tomato paste, chicken broth, sugar, balsamic vinegar, basil, oregano, and bay leaf. Season with salt and black pepper to taste, then stir well to combine all the ingredients.

4. Bring the soup to a boil.

Cover the pot and bring the mixture to a boil. Meanwhile, break the lasagna noodles into bite-sized pieces.

5. Cook the noodles.

Add the broken noodles to the boiling soup and stir to prevent them from sticking together. Reduce the heat to medium-low and simmer uncovered, stirring occasionally, until the noodles are tender. Follow the package’s suggested cooking time and adjust as needed.

6. Remove the bay leaf.

Once the noodles are cooked, remove the bay leaf and taste the soup. Adjust the seasonings if necessary. If the soup is thicker than you prefer, add a little extra broth to reach your desired consistency.

7. Add toppings and serve.

Ladle the hot soup into bowls and finish with shredded mozzarella, grated Parmesan, or a dollop of ricotta. Serve immediately while warm and comforting.

Enjoy this hearty one-pot lasagna soup with crusty bread, garlic toast, or a crisp green salad for a complete and satisfying dinner.
