Instructions
1. Heat the Oven
Set the oven to 350°F (175°C) and allow it to fully preheat.
2. Brown the Sausage
Place a skillet over medium heat and cook the sausage, breaking it apart as it cooks, until fully browned. Remove any excess grease and set aside.
3. Mix the Batter
In a large bowl, whisk together the pancake mix, milk, eggs, vanilla extract, and cinnamon if desired. Stir just until incorporated; a few small lumps are perfectly fine.
4. Prepare the Baking Dish
Lightly coat a 9×13-inch baking dish with cooking spray or butter.
5. Assemble the Casserole
- Spread half of the pancake batter evenly into the prepared dish.
- Scatter the cooked sausage over the batter layer.
- Cover with the remaining pancake batter, spreading gently to distribute it evenly.
6. Add the Syrup
Pour the maple syrup evenly across the surface of the casserole.
