Pepper Bites

These Low-Carb Pepper Bites are a simple, colorful snack made with sweet mini bell peppers, creamy cream cheese, and black sesame seeds.
They’re easy to prepare, naturally low in carbs, and perfect for parties, game days, appetizers, or a light snack. The peppers soften and blister slightly in the oven while the cream cheese becomes warm and creamy.
Low-Carb Pepper Bites
Ingredients
- 1 pound mini red and yellow bell peppers
- 8 ounces cream cheese, softened
- 2 tablespoons black sesame seeds
Directions
1. Preheat the oven
Preheat your oven to 400°F (200°C).
Lightly grease a glass baking dish or coat it with nonstick cooking spray.
2. Prepare the peppers
Rinse and dry the mini peppers.
Slice them in half lengthwise, leaving the stems attached if desired.
Remove the seeds and membranes.
3. Arrange in the baking dish
Place the pepper halves cut-side up in the prepared baking dish.
Nestle them close together so they stay upright while baking.
4. Add the cream cheese
Stir the softened cream cheese until smooth.
Spoon or pipe about 1 teaspoon into each pepper half, slightly mounding the filling.
5. Add the sesame seeds
Sprinkle the filled peppers generously with black sesame seeds.
6. Bake
Bake for 15 to 18 minutes, or until the pepper skins begin to blister and the cream cheese is hot and lightly golden around the edges.
7. Rest and serve
Let the pepper bites cool for about 5 to 10 minutes before serving.
Serve warm straight from the baking dish or arrange them on a platter.
