Slow Cooker Amish Butter Chicken

Slow Cooker Amish Butter Chicken
Ingredients
- 3 to 3 1/2 pounds bone-in, skin-on chicken thighs, about 6 to 8 pieces
- 1 cup salted butter, 2 sticks, cut into chunks
- 1 packet dry onion soup mix, about 1 ounce
Directions
1. Prepare the chicken
Pat the chicken thighs dry with paper towels.
Removing excess moisture helps prevent the cooking juices from becoming too watery.
2. Arrange in the slow cooker
Place the chicken thighs in a single layer in a 5- to 7-quart slow cooker, skin side facing up.
Try not to stack the pieces if possible.
3. Add the seasoning
Sprinkle the dry onion soup mix evenly over the chicken.
4. Add the butter
Scatter the butter chunks over and around the chicken thighs.
As the chicken cooks, the butter will melt together with the seasoning and natural juices to form a rich sauce.
5. Slow cook
Cover and cook on:
- LOW for 5 to 6 hours, or
- HIGH for 3 to 4 hours
The chicken is ready when it is tender and reaches an internal temperature of at least 165°F (74°C) at the thickest part.
The skin will stay soft rather than crisp, but the edges may develop some deeper color as the chicken cooks.
6. Finish and serve
Carefully remove the lid.
Spoon some of the buttery cooking juices over the chicken before serving.
Taste and adjust the seasoning if needed.
Serve hot over mashed potatoes, buttered rice, or egg noodles, with green beans, corn, salad, or warm bread on the side.
