Slow Cooker Potato & Onion Bake (4 Ingredients)

Slow Cooker Potato & Onion Bake (4 Ingredients)

Ingredients

  • 3 tbsp unsalted butter (plus extra for greasing)
  • 2½ lbs russet or Yukon Gold potatoes, peeled and sliced ⅛-inch thick
  • 2 large yellow onions, thinly sliced
  • 3 tbsp all-purpose flour
  • 1 tsp kosher salt (or to taste)
  • ½ tsp black pepper (optional)

Instructions

Grease a 4–6 quart slow cooker with butter.

Cut the potatoes into thin, even slices (about ⅛ inch thick). Slice the onions into thin strips.

In a small bowl, combine the flour, salt, and pepper.

Arrange a layer of potatoes along the bottom of the slow cooker, slightly overlapping. Add a layer of onions, then sprinkle a bit of the flour mixture over the top and dot with small pieces of butter.

Continue layering in the same order until all ingredients are used, finishing with a layer of potatoes. Add the remaining butter on top.

Cover and cook:

  • On HIGH for 3½–4 hours, or
  • On LOW for 6–7 hours,
    until the potatoes are tender and the onions are soft.

Optional: Leave the lid slightly open and let the dish sit on WARM or LOW for 15–20 minutes to allow excess moisture to evaporate and the top to lightly brown.

Serve directly from the slow cooker, scooping through the layers to get a mix of soft potatoes and buttery onions. Taste and adjust seasoning if needed before serving.
