Smothered Pork Chops with Creamy Potato Gravy
Nothing says comfort food quite like tender pork chops simmered in a rich, savory gravy alongside soft potatoes. This hearty skillet meal brings classic family-dinner flavor to the table with juicy pork, creamy sauce, and perfectly cooked potatoes all in one pan. The combination of herbs, onions, and buttery gravy creates a warm, satisfying dish that feels homemade in every bite.
Ingredients (Serves 4)
Main Ingredients
- 4 bone-in pork chops (about 1 inch thick)
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp paprika
- 1 tsp garlic powder
- 2 tbsp vegetable oil or olive oil
- 1 medium onion, thinly sliced
- 3 garlic cloves, minced
- 3 tbsp all-purpose flour
- 2 cups chicken broth
- ½ cup heavy cream or whole milk
- 1 tsp dried thyme or 1 tbsp fresh thyme
- 2 lbs baby potatoes, halved or quartered if large
- 2 tbsp butter
- Fresh parsley, chopped, for garnish
Instructions
1️⃣ Season the pork chops
Pat the pork chops dry with paper towels. Season both sides with salt, pepper, paprika, and garlic powder.
2️⃣ Brown the pork chops
Heat the oil in a large skillet or Dutch oven over medium-high heat. Sear the pork chops for 3–4 minutes per side until nicely browned. Transfer them to a plate and set aside.
3️⃣ Sauté the onions and garlic
Using the same skillet, cook the sliced onions for about 5 minutes until softened and lightly caramelized. Add the minced garlic and cook for another minute until fragrant.
4️⃣ Prepare the gravy
Sprinkle the flour over the onion mixture and stir well. Slowly whisk in the chicken broth until smooth. Add the cream, thyme, and butter, then simmer for about 5 minutes until the gravy thickens slightly.
5️⃣ Add potatoes and pork chops
Stir the potatoes into the gravy, then place the pork chops back into the skillet. Spoon some of the sauce over the top of the meat.
6️⃣ Simmer until fully cooked
Cover the skillet and lower the heat. Cook for 25–30 minutes, stirring occasionally, until the potatoes are tender and the pork chops reach an internal temperature of 145°F.
7️⃣ Garnish and serve
Sprinkle fresh parsley over the dish before serving. Spoon extra gravy over each pork chop and potato serving for even more flavor.
