This homemade Mexican Pizza features crispy, shallow-fried flour tortillas layered with seasoned ground beef, creamy refried beans, and a rich tomato pizza sauce. Melted cheddar and Monterey Jack cheese are finished with diced tomatoes, black olives, and green onions for a flavorful, cheesy meal you can make at home.

1. Prepare the Refried Beans

Heat 1 tablespoon of oil in a skillet over medium heat. Add the diced onion and sauté until translucent.

Add the canned chili beans along with their liquid. Heat through, then mash with a potato masher for 5–8 minutes, until the mixture thickens. Set aside.

2. Cook the Ground Beef

Brown the ground beef in a skillet over medium-high heat. Add the taco seasoning according to the package directions.

Drain any excess fat and set the seasoned beef aside.

3. Fry the Tortillas

Heat high-heat cooking oil in a skillet or on a griddle. Shallow-fry each flour tortilla for 60–90 seconds per side, until golden brown.

Transfer the tortillas to paper towels to drain, then sprinkle lightly with salt.

4. Build the Bottom Layer

Spread about ⅓ cup of warm refried beans over one fried tortilla. Add ¼ of the cooked taco meat on top.

5. Prepare the Top Layer

Spread 2–3 tablespoons of Mexican Pizza sauce over a second fried tortilla.

Top with shredded cheddar, Monterey Jack, diced tomatoes, black olives, and green onions.

6. Melt the Cheese

Place the assembled tortillas on a griddle and cover with a melting dome. Alternatively, place them on a baking sheet and bake at 400°F until the cheese is completely melted and bubbling.

7. Stack and Serve

Place the cheese-topped tortilla over the bean-and-beef base. Allow it to cool slightly, then cut into quarters and serve warm.
