The church ladies set out a tray of these at the neighborhood gathering, and I kept sneaking back for more until every last one was gone.

Easy Cheesy Green Chile Tortilla Bites
These crispy tortilla pinwheels are a simple appetizer that comes together with only four ingredients. Soft flour tortillas are filled with a creamy mixture of cream cheese, cheddar, and mild green chiles, then rolled, sliced, and baked until golden around the edges. Each bite has a satisfying crunch on the outside with a rich, melty cheese filling inside.
They’re quick enough for everyday snacking but also make a great addition to parties, potlucks, game-day tables, and family gatherings.
Ingredients
| Ingredient | Amount |
|---|---|
| Large flour tortillas, 8–10 inches | 4 |
| Cream cheese, softened | 8 oz |
| Sharp cheddar cheese, shredded | 1 cup |
| Diced green chiles, drained | 1 can (4 oz) |
Instructions
1. Heat the Oven
Set the oven to 375°F (190°C). Prepare a large baking sheet by lining it with parchment paper or lightly coating it with cooking spray.
2. Combine the Filling
Add the softened cream cheese, shredded cheddar, and drained green chiles to a mixing bowl. Stir everything together until the mixture is well combined and easy to spread.
3. Spread Over the Tortillas
Lay the tortillas flat on a clean surface. Divide the filling evenly among them and spread it across each tortilla, leaving a narrow uncovered edge around the outside.
4. Roll Them Up
Starting at one side, roll each tortilla firmly into a compact cylinder. Keep the seam underneath so the rolls stay closed.
5. Cut Into Pinwheels
If desired, remove the uneven ends from each roll. Slice the tortillas into pieces about ½ to ¾ inch thick.
6. Prepare for Baking
Transfer the slices to the prepared baking sheet with the cut sides facing upward. Leave a small amount of space between each pinwheel.
7. Bake Until Golden
Place the tray in the oven and bake for approximately 12–16 minutes. The pinwheels are ready when the tortilla edges become golden and crisp and the cheese mixture is hot and melted.
8. Rest and Serve
Take the pinwheels out of the oven and allow them to cool for about 5 minutes. This gives the filling a chance to firm up slightly.
Serve warm or allow them to come to room temperature before serving.
Serving Ideas
Serve these cheesy pinwheels alongside salsa, guacamole, sour cream, or another favorite dip. They’re great for appetizer platters, casual gatherings, parties, or as a quick snack whenever you want something warm and cheesy.
