Crock Pot Cheeseburger Soup

There’s something special about a big pot of soup slowly bubbling away—it instantly makes a home feel cozy and welcoming. On hectic weekdays, I often rely on meals that practically cook themselves, and this slow cooker cheeseburger soup has become a go-to favorite. It’s especially perfect when the weather turns cooler or when we’re craving something hearty and comforting.

The first time I made it was on a night when I needed to use up what I had—ground beef in the fridge, a few potatoes in the pantry, and some cheese that couldn’t go to waste. Somehow, those simple ingredients turned into a rich, creamy soup that captures all the flavors of a classic cheeseburger—only warmer, cozier, and made for spoonfuls.

Now, it’s a staple in our home for easy dinners, game days, and laid-back gatherings. With savory beef, tender potatoes, melted cheddar, and a velvety broth, it truly feels like comfort in every bowl.


🍲 Crock Pot Cheeseburger Soup

🛒 Ingredients

  • Ground beef – 1 lb (lean preferred)
  • Yellow onion – 1 small, finely diced
  • Garlic – 2 cloves, minced
  • Russet potatoes – 3 cups, peeled and diced (about 2–3 medium)
  • Carrots – 1 cup, finely chopped
  • Celery – 1 stalk, diced
  • Chicken broth – 3 cups, low-sodium
  • Dried parsley – 1 tsp (optional)
  • Dried basil – ½ tsp
  • Paprika – ½ tsp
  • Salt & pepper – to taste
  • Unsalted butter – 2 tbsp
  • All-purpose flour – 2 tbsp
  • Whole milk – 1½ cups (or half-and-half for a richer texture)
  • Sharp cheddar cheese – 2 cups, shredded
  • Sour cream – ½ cup

Step 1: Cook the Beef
In a skillet over medium heat, cook the ground beef with the diced onion until browned and softened. Drain any excess grease. Add the garlic and cook for another 30 seconds.

Step 2: Fill the Slow Cooker
Transfer the beef mixture to the crock pot. Add the potatoes, carrots, celery, broth, parsley, basil, paprika, salt, and pepper. Stir to combine.

Step 3: Slow Cook
Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the potatoes are tender.

Step 4: Prepare the Cream Mixture
About 20 minutes before serving, melt the butter in a saucepan. Whisk in the flour and cook for 1–2 minutes. Gradually add the milk, whisking until smooth and slightly thickened.

Step 5: Add Cheese & Finish
Pour the milk mixture into the slow cooker. Stir in the shredded cheddar a little at a time until fully melted. Add the sour cream and mix until creamy.

Step 6: Final Heating
Cover and let cook on LOW for another 15–20 minutes to thicken.

Step 7: Serve
Ladle into bowls and top with your favorite cheeseburger-inspired toppings like extra cheese, chopped pickles, or a drizzle of ketchup or mustard.
