Ham and Egg Breakfast Cups

Ham and Egg Breakfast Cups
Ingredients:
- 12 slices deli ham (thin, round)
- 8 large eggs
- 1/2 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/2 tsp black pepper
- 1/4 tsp salt (optional)
- 1 tbsp nonstick spray or butter (for greasing)
Directions:
Preheat the oven to 375°F (190°C) and lightly grease a 12-cup muffin tin.
Press one slice of ham into each cup to form a shell.
In a bowl, whisk together the eggs, cream, cheddar cheese, pepper, and salt until fully combined.
Set the muffin tin on a baking sheet and pour the mixture into each ham cup, filling about three-quarters full.
Bake for 15–18 minutes, until the centers are set and the tops are lightly golden.
Let them cool for about 5 minutes, then carefully remove from the pan.
Serve warm, or allow them to cool completely and store in the refrigerator for a quick grab-and-go breakfast.
