How to Make Confetti Salad
Step 1: Prepare the Ingredients
Dice the bell peppers, cucumber, red onion, and optional apple or mango into bite-sized pieces. Slice the cherry tomatoes in half, chop the fresh herbs, and rinse and drain the black beans and corn.
Step 2: Mix the Dressing
In a small bowl, whisk together the olive oil, lime juice, honey (or maple syrup), cumin, optional chili powder, salt, and black pepper until smooth and well blended. Taste and adjust the seasoning if desired.
Step 3: Combine Everything
In a large serving bowl, add the bell peppers, cucumber, cherry tomatoes, black beans, corn, red onion, optional fruit, and chopped herbs. Pour the dressing over the top and gently toss until all of the ingredients are evenly coated.
