Impossible Cheeseburger Pie is a comforting, meat-free twist on the classic diner favorite. A flaky, buttery crust holds a flavorful filling made with seasoned plant-based ground meat, sautéed onions and peppers, and plenty of melted cheddar cheese. A simple mixture of eggs and milk is poured over the filling before baking, creating a rich, custard-like layer that brings all the ingredients together. The finished pie is hearty, cheesy, and perfect for family dinners or casual gatherings.
Ingredients
For the Filling
- 1 pound plant-based ground meat alternative
- 1 cup diced onion
- 1 cup diced bell pepper
- 2 garlic cloves, minced
- 1½ cups shredded cheddar cheese, divided
- 1 tablespoon Worcestershire sauce (use vegan if desired)
- 1 teaspoon prepared mustard
- Salt and black pepper, to taste
For the Crust
- 1 cup all-purpose flour (or a gluten-free flour blend)
- ⅓ cup cold butter or vegan butter, cut into cubes
- ¼ teaspoon salt
- 3–4 tablespoons cold water
For the Egg Mixture
- 2 large eggs
- 1 cup milk or your preferred plant-based milk
Directions
Step 1: Make the Crust
In a mixing bowl, combine the flour and salt. Cut the cold butter into the flour until the mixture resembles coarse crumbs. Gradually stir in the cold water until the dough just comes together. Shape it into a disk, wrap, and refrigerate for 30 minutes.
Step 2: Cook the Filling
While the dough chills, heat a large skillet over medium heat. Sauté the onion, bell pepper, and garlic for about 5 minutes until softened. Add the plant-based ground meat, Worcestershire sauce, mustard, salt, and pepper. Cook for 7–10 minutes, stirring occasionally, until well browned. Remove from the heat and stir in 1 cup of the shredded cheddar cheese.
Step 3: Prepare the Pie Crust
Preheat the oven to 375°F (190°C). Roll the chilled dough into a circle large enough for a standard pie dish. Carefully place it into the dish, trim any excess dough, and prick the base lightly with a fork.
Step 4: Assemble the Pie
Spread the prepared filling evenly into the crust. In a separate bowl, whisk together the eggs and milk until fully combined. Pour the mixture evenly over the filling, allowing it to settle throughout the pie. Sprinkle the remaining cheddar cheese over the top.
Step 5: Bake
Bake for 30–35 minutes, or until the center is fully set and the crust is golden brown. The filling should be bubbling lightly around the edges.
Step 6: Rest and Serve
Remove the pie from the oven and let it stand for about 10 minutes before slicing. This allows the filling to firm up for cleaner slices.
