Cheesy Cauliflower Bites
Ingredients
- 1 medium head cauliflower, cut into florets
- 1 cup shredded sharp cheddar cheese
- 1/2 cup grated Parmesan cheese
- 2 large eggs
- 1/2 cup breadcrumbs
- 2 tablespoons fresh parsley, finely chopped
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil or cooking spray, for baking
Directions
1. Preheat the oven
Preheat your oven to 400°F (200°C).
Line a baking sheet with parchment paper and lightly coat it with cooking spray.
2. Cook the cauliflower
Steam or boil the cauliflower florets for 5 to 7 minutes, or until tender but not overly soft.
Drain thoroughly and let them cool slightly.
Removing as much moisture as possible is important so the bites hold their shape.
3. Mash the cauliflower
Transfer the cauliflower to a large bowl.
Use a fork or potato masher to roughly mash it, leaving a little texture rather than making it completely smooth.
4. Mix the ingredients
Add the cheddar, Parmesan, eggs, breadcrumbs, parsley, garlic powder, onion powder, paprika, salt, and black pepper.
Mix until everything is evenly combined.
