Beef and Potato Skillet

Cheesy Beef & Potato Skillet 🥔🥩
A simple one-pan meal packed with crispy potatoes, seasoned ground beef, colorful vegetables, and gooey cheddar cheese. It’s quick enough for a busy weeknight and hearty enough to satisfy the whole family.
Ingredients
- 1 tablespoon oil
- 1 pound potatoes, about 2 medium, cut into ½-inch cubes
- 1 pound lean ground beef
- 1½ teaspoons salt
- ½ teaspoon black pepper
- 1 medium onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- ½ teaspoon smoked paprika
- 1 cup shredded cheddar cheese
- 2 green onions, chopped
Instructions
- Cook the potatoes: Heat the oil in a large nonstick skillet over medium-high heat. Add the potatoes in an even layer and cook for about 2 minutes without stirring. Stir and continue cooking for another 2 minutes.
- Add the beef: Move the potatoes to one side of the skillet and add the ground beef to the empty side. Season with salt and black pepper.
- Brown everything: Break the beef apart with a wooden spoon and cook for about 4 minutes, leaving it undisturbed occasionally so it can brown. Stir the potatoes from time to time.
- Add the vegetables: If needed, drain off excess grease. Add the chopped onion, bell pepper, garlic, and smoked paprika. Stir everything together.
- Finish cooking: Cook for another 3–4 minutes, stirring occasionally, until the beef is fully cooked, the vegetables are tender, and the potatoes are fork-tender.
- Melt the cheese: Remove the skillet from the heat and scatter the shredded cheddar over the top. Let it sit for a minute or two until the cheese melts.
- Serve: Sprinkle with chopped green onions and serve hot.
