Cheesy Beef & Potato Skillet 🥔🥩

A simple one-pan meal packed with crispy potatoes, seasoned ground beef, colorful vegetables, and gooey cheddar cheese. It’s quick enough for a busy weeknight and hearty enough to satisfy the whole family.

Ingredients

  • 1 tablespoon oil
  • 1 pound potatoes, about 2 medium, cut into ½-inch cubes
  • 1 pound lean ground beef
  • 1½ teaspoons salt
  • ½ teaspoon black pepper
  • 1 medium onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • ½ teaspoon smoked paprika
  • 1 cup shredded cheddar cheese
  • 2 green onions, chopped

Instructions

  1. Cook the potatoes: Heat the oil in a large nonstick skillet over medium-high heat. Add the potatoes in an even layer and cook for about 2 minutes without stirring. Stir and continue cooking for another 2 minutes.
  2. Add the beef: Move the potatoes to one side of the skillet and add the ground beef to the empty side. Season with salt and black pepper.
  3. Brown everything: Break the beef apart with a wooden spoon and cook for about 4 minutes, leaving it undisturbed occasionally so it can brown. Stir the potatoes from time to time.
  4. Add the vegetables: If needed, drain off excess grease. Add the chopped onion, bell pepper, garlic, and smoked paprika. Stir everything together.
  5. Finish cooking: Cook for another 3–4 minutes, stirring occasionally, until the beef is fully cooked, the vegetables are tender, and the potatoes are fork-tender.
  6. Melt the cheese: Remove the skillet from the heat and scatter the shredded cheddar over the top. Let it sit for a minute or two until the cheese melts.
  7. Serve: Sprinkle with chopped green onions and serve hot.
