Best Slow Cooker Balsamic Beef Roast

The first time this roast made its way into my slow cooker, it was more of a happy accident than a planned meal. I had a chuck roast waiting in the freezer, a bottle of balsamic vinegar sitting in the pantry, and a slow cooker that rarely got much attention. With almost no prep required, I combined the ingredients, set the cooker, and went about my day.

Hours later, the house was filled with an incredible aroma. The balsamic had transformed into a rich, savory sauce with just the right touch of sweetness, while the beef had become fall-apart tender. It tasted like something that required far more effort than it actually did.

Slow Cooker Balsamic Beef Roast (3 Ingredients)

Ingredients

Optional additions: sliced onion, minced garlic, fresh rosemary, fresh thyme, brown sugar, or honey.

Directions

Step 1: Season the Roast

Pat the roast dry with paper towels and season generously with salt and black pepper.

Step 2: Optional Sear

For extra flavor, sear the roast in a hot skillet for 2–3 minutes per side until browned. Deglaze the pan with about ½ cup of the beef broth and pour everything into the slow cooker.

Step 3: Slow Cook

Place the roast in the slow cooker. Pour in the balsamic vinegar and remaining beef broth. Cover and cook on LOW for 8–10 hours or HIGH for 5–6 hours, until the meat is fork-tender.

Step 4: Shred and Finish

Transfer the roast to a cutting board and shred it with two forks. If desired, simmer the cooking liquid on the stovetop for several minutes to create a thicker sauce. Alternatively, serve it as a flavorful au jus.

Step 5: Serve

Return the shredded beef to the sauce or serve separately. Spoon over mashed potatoes, egg noodles, rice, crusty bread, or roasted vegetables.

Serving Notes

The balsamic-infused sauce is packed with flavor and pairs beautifully with the tender beef. A sprinkle of fresh parsley can add color, but the rich roast and savory sauce are truly the stars of the meal.
