Bologna Cheese Bites

This simple snack brings back memories of easy afternoons and quick, no-fuss bites made from whatever was in the fridge. With just three ingredients, these bologna cheese bites turn into crispy, melty little cups that are surprisingly satisfying. As they bake, the edges curl up and crisp while the cheese melts into a warm, bubbly center.

Serve them straight from the oven while the cheese is still gooey. They work well on their own or alongside crunchy vegetables like celery, cucumbers, or bell peppers. A bit of mustard on the side adds extra flavor, or you can pair them with pickles or a light salad for a simple snack plate.

Bologna Cheese Bites

Ingredients

  • 8 slices bologna (regular or thick-cut)
  • 4 oz cheddar cheese, cut into 8 cubes
  • 1 teaspoon oil or butter (for greasing)

Instructions

1. Preheat the oven
Set the oven to 400°F (200°C). Line a baking sheet with foil and lightly grease it.

2. Arrange the bologna
Lay the slices flat on the prepared baking sheet, leaving space between each one.

3. Add the cheese
Place one cube of cheddar in the center of each slice and press down gently.

4. Bake
Bake for 8–12 minutes, until the edges are crisp and curled and the cheese is melted and bubbling.

5. Rest and serve
Let them cool for a couple of minutes before carefully removing and serving warm.
