Instructions
Cook the Pasta
Bring a large pot of salted water to a boil. Cook the spaghetti according to package directions until al dente. Reserve ½ cup of the pasta water, then drain and set aside.
Brown the Beef
Heat a large skillet or Dutch oven over medium-high heat. Cook the ground beef and diced onion until the meat is fully browned and the onion is tender, about 7–8 minutes. Stir in the garlic and cook for another 30 seconds. Drain any excess grease.
Create the Sauce
Return the skillet to medium heat. Pour in the chicken broth, scraping up any flavorful browned bits from the bottom of the pan. Add the undrained Rotel tomatoes and bring the mixture to a light simmer.
Add the Cheese
Reduce the heat slightly and stir in the cream cheese and Velveeta. Continue stirring until both cheeses have completely melted and the sauce is smooth and creamy.
Season
Mix in the Italian seasoning, garlic powder, salt, and black pepper. Taste and adjust seasonings if needed. If the sauce becomes too thick, stir in a little reserved pasta water until the desired consistency is reached.
Combine
Add the cooked spaghetti to the skillet and toss well until all of the noodles are evenly coated in the cheesy beef sauce.
Finish and Serve
Remove from the heat and sprinkle the shredded cheddar cheese over the top. Allow the dish to rest for 2 minutes so the cheese can melt. Serve warm with garlic bread and a crisp salad.
✨ Rich, creamy, and packed with comforting flavor, this easy pasta dish is one you’ll want to add to your regular dinner rotation.
