Crunchy Cowboy Slaw

Classic coleslaw is always a solid choice, but sometimes you want something with more punch—extra crunch, bolder flavor, and a bit of flair. That’s where Crunchy Cowboy Slaw comes in. Packed with beans, corn, peppers, and coated in a smoky, slightly spicy dressing, it’s the kind of dish that quickly becomes a favorite. Ideal for potlucks, BBQs, or family dinners—it rarely lasts long on the table.

🥗 Crunchy Cowboy Slaw

🧾 Ingredients

  • 1 (16 oz) bag coleslaw mix
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 (15 oz) can corn, drained
  • 1 (4 oz) can diced green chiles or jalapeños
  • 1 red bell pepper, diced
  • ⅓ cup green onion, chopped
  • 2 tbsp fresh cilantro, minced
  • 1 (10 oz) bag Fritos
  • 1 tbsp taco seasoning
  • 1–2 tsp chipotle powder
  • 1 cup mayonnaise
  • Juice of 1 lime
  • Kosher salt and black pepper, to taste

👩‍🍳 Preparation

Make the dressing:
In a large bowl, whisk together the mayonnaise, taco seasoning, chipotle powder, and lime juice until smooth. Taste and adjust with salt and pepper as needed.

Assemble the slaw:
Add the coleslaw mix, black beans, corn, chiles, bell pepper, green onion, and cilantro. Toss thoroughly so everything is well coated in the dressing.

Chill & serve:
Refrigerate until ready to serve. Just before serving, stir in the Fritos to keep them crisp.
