Old-Fashioned Potato Candy Pinwheels

Potato candy is a classic homemade treat that turns a few simple ingredients into soft, sweet pinwheel candies filled with creamy peanut butter. The mashed potato creates a smooth dough texture that blends beautifully with powdered sugar, making these nostalgic candies easy to roll, slice, and enjoy.

Ingredients

Instructions

1. Make the candy dough

Place the cold mashed potatoes into a mixing bowl. Gradually add the powdered sugar one cup at a time, stirring well after each addition, until a thick and workable dough forms.

For best results, use plain mashed potatoes with no butter, milk, or seasoning added.

2. Roll out the dough

Dust a clean surface lightly with powdered sugar. Roll the dough into a rectangle about 12×8 inches and roughly 1/4 inch thick.

If the dough feels sticky, add a little more powdered sugar while rolling.

3. Spread the peanut butter

Slightly warm the peanut butter so it spreads smoothly. Evenly coat the surface of the dough, leaving a small border around the edges to help prevent overflow during rolling.

4. Roll into a log

Starting from one long side, carefully roll the dough into a tight log shape, similar to a jelly roll.

5. Chill and slice

Wrap the log tightly and refrigerate for at least 1 hour, or place it in the freezer for about 30 minutes until firm.
