Low-Carb Ham & Cheese Egg Bakes

Ingredients

  • 8 large eggs
  • 1/4 cup heavy cream or whole milk
  • 1 cup shredded cheddar cheese
  • 1 cup cooked ham, diced
  • 1/4 cup green bell pepper, diced
  • 2 tablespoons green onions, finely chopped
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Nonstick cooking spray or butter, for greasing

Directions

1. Preheat the oven

Preheat your oven to 375°F (190°C).

Grease a 6-cup jumbo muffin pan or a 12-cup standard muffin tin with nonstick spray or butter.

2. Whisk the eggs

In a large bowl, whisk together the eggs, cream or milk, garlic powder, onion powder, salt, and black pepper.

Mix until smooth and well combined.

3. Add the fillings

Divide the diced ham, shredded cheddar, green bell pepper, and green onions evenly among the prepared muffin cups.

4. Pour in the egg mixture

Carefully pour the egg mixture over the fillings.

Fill each cup about three-quarters full to leave room for the eggs to puff as they bake.

5. Bake

Bake for 20 to 25 minutes, or until the egg bakes are puffed and completely set in the center.

6. Cool and serve

Let them rest in the pan for about 5 minutes.

Carefully remove and serve warm.

Fluffy, cheesy, and packed with ham and vegetables, these easy egg bakes are a simple low-carb option for breakfast, brunch, meal prep, or a quick family meal.
