My father-in-law requested this every Father’s Day for 40 years. Three ingredients and it still beats anything from a restaurant.

This Oven-Baked Chicken Bellhaven coats tender chicken breasts in a sweet-and-savory glaze made from luscious apricot preserves and savory dry onion soup mix. As it bakes uncovered, the sauce transforms into a rich, bubbling glaze that infuses every bite with a delicious sweet-and-tangy flavor.
Oven-Baked 3-Ingredient Chicken Bellhaven
Ingredients
- Boneless, skinless chicken breasts – 4
- Apricot preserves – 1 cup
- Dry onion soup mix – 1 packet
Step-by-Step Directions
- Preheat and prep – Set your oven to 350°F and lightly grease a rectangular glass baking dish. Arrange the chicken breasts in a single layer inside the dish.
- Mix the glaze – In a small bowl, stir together the apricot preserves and dry onion soup mix until they are thoroughly combined and smooth.
- Coat the chicken – Spoon the glaze evenly over the top of each chicken breast, spreading it around so every piece is fully covered.
- Bake – Bake uncovered for 35 to 45 minutes, until the glaze is bubbling and caramelized and the thickest part of the chicken registers 165°F internally.
- Rest and serve – Let the chicken rest for about 5 minutes before serving, then spoon the warm pan glaze over each piece.
