Nana’s Cream of Tomato Soup

Nana’s Creamy Tomato Soup is a smooth, comforting classic made with juicy tomatoes, sautéed onion and garlic, savory vegetable broth, and a touch of cream. Fresh basil adds a fragrant finish, making every spoonful rich and flavorful.
Ingredients
- 6 fresh ripe tomatoes, chopped
- 1 onion, chopped
- 3 garlic cloves, chopped
- 2 tablespoons olive oil
- 4 cups vegetable broth
- 1 cup heavy cream or coconut cream
- 1/4 cup fresh basil leaves
- Salt and black pepper, to taste
Directions
- Prepare the vegetables: Wash and chop the tomatoes, onion, and garlic. Heat the olive oil in a large pot over medium heat. Add the onion and sauté for 3–4 minutes until softened.
- Add the garlic and tomatoes: Stir in the garlic and cook for about 1 minute, until fragrant. Add the tomatoes and continue cooking until they soften and release their juices.
- Simmer the soup: Pour in the vegetable broth and bring the mixture to a gentle simmer. Cook uncovered for approximately 20 minutes, stirring occasionally.
- Blend until smooth: Remove the pot from the heat. Using an immersion blender, puree the soup until creamy and smooth.
- Stir in the cream and basil: Add the heavy cream and fresh basil leaves. Season with salt and black pepper according to taste.
- Finish cooking: Return the soup to low heat and simmer gently for another 5–10 minutes, allowing the flavors to blend.
- Serve: Ladle the hot soup into bowls and enjoy immediately.
