The “Poor Man’s Husband” casserole is a warm, budget-friendly classic that has been a staple on dinner tables for years. Ingredients
You’ll need:

  • 1 lb ground beef (or turkey)
  • 1 small onion, finely chopped
  • 1 clove garlic, minced
  • 1 can (10.5 oz) condensed tomato soup
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup milk
  • 1 tsp Worcestershire sauce
  • 1 tsp dried thyme
  • Salt and black pepper, to taste
  • 4 cups cooked egg noodles
  • 1 cup frozen peas
  • 1 cup shredded cheddar cheese
  • 1/2 cup breadcrumbs
  • 2 tbsp melted butter

Instructions

Preheat the Oven
Set the oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.

Cook the Meat
In a large skillet over medium heat, cook the ground beef, breaking it apart as it browns. Drain off any excess fat.

Add Onion and Garlic
Stir in the chopped onion and garlic, cooking for about 3–4 minutes until softened and fragrant.

Prepare the Sauce
In a saucepan, combine the tomato soup, cream of mushroom soup, milk, Worcestershire sauce, thyme, salt, and pepper. Heat while stirring until smooth and warmed through.

Assemble the Layers
In the prepared baking dish, layer half of the noodles, followed by half of the meat mixture, half of the peas, and half of the sauce. Repeat the layers once more.

Add the Topping
Sprinkle the shredded cheese evenly over the top. Mix the breadcrumbs with melted butter and scatter them over the cheese.

Bake
Bake for 25–30 minutes, until the casserole is hot, bubbly, and golden on top. For extra crispiness, broil briefly at the end.

Serve
Let it rest for a few minutes before serving. It’s delicious on its own or paired with a simple salad or vegetables.
