1. Scramble the Eggs
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the beaten eggs and scramble until fully cooked. Remove the eggs from the pan and set aside.
2. Sauté the Aromatics
Add the remaining 1 tablespoon of oil to the same pan. Add the diced onion and minced garlic. Cook until the onion becomes translucent and fragrant.
3. Cook the Vegetables
