Easy Baked Chicken Lombardy
Ingredients
- 4 small chicken breasts (about 1½ lbs), patted dry
- 8 oz fresh mushrooms, sliced
- 1 can (10.5 oz) cream of mushroom soup
- 1½ cups shredded mozzarella cheese
- Salt and black pepper, to taste
Instructions
Step 1
Warm a small amount of butter or oil in a skillet over medium heat. Add the sliced mushrooms and cook for 6–8 minutes until softened and lightly browned.
Tip: Sautéing the mushrooms first helps remove excess liquid and gives the dish a deeper savory flavor.
Step 2
Preheat the oven to 375°F. Season the chicken breasts with salt and pepper, then arrange them in a lightly greased baking dish. Stir 2–3 tablespoons of water into the cream of mushroom soup to thin it slightly, then spread the soup mixture over the chicken.
Step 3
Spoon the cooked mushrooms and any flavorful juices from the skillet over the top of the chicken. Cover the dish loosely with foil and bake for 20 minutes.
Tip: The juices left in the skillet add extra richness to the sauce, so be sure to include them.
Step 4
Remove the foil and sprinkle the mozzarella cheese evenly over the chicken. Return the dish to the oven and bake uncovered for another 10–15 minutes, until the cheese is melted and bubbling and the chicken reaches an internal temperature of 165°F.
Optional: Broil for 1–2 minutes at the end for a lightly golden cheesy topping.
