Instructions

  1. Preheat & Prepare Pan:
    Set your oven to 350°F (175°C) and grease a 9×13-inch baking pan with butter or cooking spray.
  2. Mix Dry Ingredients:
    In a medium mixing bowl, whisk together flour, baking powder, salt, and cinnamon.
  3. Mix Wet Ingredients:
    In a separate large bowl, mash the bananas. Add butter, sugar, eggs, and vanilla extract. Mix until smooth and well combined.
  4. Make the Batter:
    Add the dry ingredients and milk to the banana mixture in alternating portions, mixing gently after each addition until just incorporated. Avoid overmixing. Set aside.
  5. Create the Crumb Topping:
    In a large bowl, mix cubed cold butter, brown sugar, and flour using a fork or pastry cutter until the texture is crumbly and coarse.
  6. Assemble the Cake:
    Spread half of the cake batter into the baking dish. Sprinkle about one-third of the crumb topping over it. Gently add the remaining batter and finish by generously topping with the rest of the crumb mixture.
