Zucchini Bacon Bites

These low-carb zucchini bacon bites are a nostalgic, crowd-pleasing snack that’s as simple as it is satisfying. Often seen at gatherings and potlucks, they deliver big flavor without the need for breading. Thick zucchini slices are wrapped in smoky bacon, topped with melted cheese, and baked until perfectly crisp on the outside and tender on the inside.
Serve them warm right off the tray with toothpicks for easy snacking. They pair well with ranch or blue cheese dressing, or can be enjoyed on their own alongside a cold drink. For a more complete spread, serve them with a fresh salad, sliced tomatoes, or a veggie platter. They also complement grilled favorites like burgers, brats, or roasted chicken.
Zucchini Bacon Bites
Ingredients:
- 2 medium zucchini (about 1½ lb), sliced into ½-inch rounds
- 12 slices bacon, cut in half
- 1½ cups shredded cheese (cheddar, Colby Jack, or similar)
Directions:
Preheat oven to 400°F (200°C). Line a baking sheet with foil and place a rack on top if you have one.
Slice the zucchini into ½-inch rounds and pat them dry with paper towels.
Wrap each piece with half a slice of bacon and place seam-side down on the baking sheet.
Bake for 15–18 minutes, until the bacon begins to crisp and the zucchini softens.
Remove from the oven, sprinkle shredded cheese over each piece, and return to bake for another 4–7 minutes until the cheese is melted and lightly golden.
Let them cool for a few minutes before serving warm.
