Ingredients
- 1½ pounds sirloin or ribeye steak, trimmed and cut into 1-inch cubes
- 4 tablespoons unsalted butter, divided
- 3 cloves garlic, finely minced
- 1 teaspoon kosher salt (optional)
- ½ teaspoon black pepper (optional)
Step-by-Step Instructions
1. Prepare the steak
Pat the steak cubes thoroughly dry with paper towels to help them develop a golden-brown crust. If desired, season with kosher salt and black pepper.
2. Heat the skillet
Place a heavy skillet, preferably cast iron, over medium-high heat. Add 2 tablespoons of butter and allow it to melt until hot and beginning to turn lightly golden.
3. Sear the first batch
Arrange half of the steak cubes in a single layer, leaving space between each piece. Let them sear undisturbed for 1–2 minutes until a deep brown crust forms. Flip and cook for another 1–2 minutes, adjusting the cooking time to your preferred doneness. Transfer the cooked steak to a warm plate.
4. Cook the remaining steak
Add 1 tablespoon of butter to the skillet. Once melted, add the remaining steak cubes and sear them in the same way, turning until nicely browned. Transfer them to the plate with the first batch.
5. Make the garlic butter
Reduce the heat to low and add the remaining tablespoon of butter to the skillet. Stir in the minced garlic and cook for 20–30 seconds, stirring constantly until fragrant. Avoid letting the garlic brown or burn.
6. Coat and serve
Return the steak bites to the skillet, or pour the hot garlic butter over them on the serving platter. Toss gently to coat each piece in the buttery sauce. Serve immediately while the steak is hot, juicy, and full of flavor.
