Some meals don’t just fill you up—they save the day. This one came to the rescue on a chaotic Tuesday (because somehow, it’s always Tuesday). The cat spilled my coffee, my kid suddenly needed three dozen cupcakes by morning, and by dinnertime I had zero energy left.

Biscuit-Topped Chicken Pot Pie
Ingredients
For the filling:
- 3 tbsp butter
- 2 leeks (white and light green parts), sliced
- 2 carrots, diced
- 2 celery stalks, diced
- 1/4 cup all-purpose flour
- 2 cups chicken broth
- 1 cup heavy cream
- 2 tbsp sherry
- 3 cups cooked chicken, diced
- 1 cup frozen peas
- 2 tsp fresh thyme leaves
- Salt and pepper, to taste
For the biscuit topping:
- 2 cups all-purpose flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 6 tbsp cold butter, cubed
- 3/4 cup milk
Instructions
Preheat the oven to 425°F (220°C).
Start with the filling. Melt the butter in a large skillet over medium heat. Add the leeks, carrots, and celery, and cook until softened, about five minutes. Stir in the flour and cook for another minute to remove the raw taste. Gradually pour in the chicken broth and cream, stirring constantly until smooth. Add the sherry, cooked chicken, peas, and thyme. Let everything simmer for about five minutes until slightly thickened. Season with salt and pepper.
For the biscuits, combine the flour, baking powder, and salt in a bowl. Cut in the cold butter until the mixture resembles coarse crumbs. Pour in the milk and stir just until a dough forms—don’t overmix.
Transfer the filling into a 9×13-inch baking dish. Drop spoonfuls of biscuit dough evenly over the top. Bake for 20–25 minutes, until the biscuits are golden and the filling is bubbling around the edges. Let it rest for about five minutes before serving.
