Dried thyme¼ tsp

Method

Cook the Bacon

Heat a large soup pot over medium heat and cook the chopped bacon until crisp, about 5–6 minutes. Transfer the bacon to a paper towel-lined plate using a slotted spoon, leaving the drippings in the pot.

Sauté the Vegetables

Add the onion, celery, carrots, and garlic to the bacon drippings. Cook for 4–5 minutes, stirring occasionally, until the vegetables become tender.

Prepare the Roux

Add the butter to the pot and let it melt. Sprinkle in the flour and whisk continuously for about 1 minute to form a smooth roux.

Add the Broth

Slowly pour in the chicken broth while whisking to prevent lumps. Bring the mixture to a gentle boil.

Cook the Potatoes

Stir in the diced potatoes, dried thyme, salt, and black pepper. Lower the heat and simmer for 20–25 minutes, or until the potatoes are fork-tender.

Finish the Soup

Remove the pot from the heat and stir in the whole milk. Avoid bringing the soup back to a boil after adding the milk to keep it smooth and creamy.

Serve

Ladle the soup into serving bowls and top with shredded cheddar cheese, the reserved crispy bacon, and chopped chives, if desired.

✨ Rich, creamy, and loaded with comforting flavors, this potato soup is the perfect meal to enjoy on cool evenings.
