Southern 3-Ingredient Pimento Cheese

Southern 3-Ingredient Pimento Cheese
Ingredients
- 8 oz sharp cheddar cheese, freshly shredded
- 1 cup mayonnaise (start with 3/4 cup for a thicker consistency)
- 1 jar (4 oz) diced pimentos, well drained
Directions
Place the shredded cheddar into a medium mixing bowl.
Add the mayonnaise, starting with 3/4 cup and increasing if a creamier texture is desired.
Drain the pimentos thoroughly, then fold them into the mixture.
Stir until everything is evenly blended.
Adjust texture as needed—add more mayo for creaminess or more cheese for a thicker spread.
Cover and refrigerate for at least 30 minutes so the flavors can meld.
Serve chilled or slightly cool with crackers or fresh vegetables. Stir before serving if necessary.
